Recipe for "Farmer's Casserole"

As promised, here is the recipe...too easy....and goood!!!

We made two 13x9 inch baking pans, which fed all of us (16?). Here's what I used:

Non-stick cooking spray
Frozen Shreded Hash Browns
18 eggs
4 cups or so of milk (to beat with the eggs)
2 8 oz blocks of medium cheddar cheese, shredded
2 8 oz blocks of pepperjack cheese, shredded
2 pkgs of diced ham
some salt and pepper and some dried onion seasoning

Coat the bottoms of the pans with the non-stick cooking spray
Line the bottom of the pans with the shredded hash browns, generously
Sprinkle half of each of the cheeses and ham over the potatoes
Beat the eggs, milk and seasonings together, pour over the ham, cheese and potatoes
Cover and chill in the fridge overnight (optional)

Bake for one hour at 350.
